Only if shedding weight wasn’t hard enough….It’s worse when you need to follow strict diets and keep off your favorite food! We understand and therefore this article is dedicated to all you people out there who’re trying to shed pounds….Go ahead and try out these mouth watering diet recipes!

Avocado & a Yogurt Dip along with Cilantro & Jalapeño

Ingredients

  • One container (16-ounce ) plain yogurt- nonfat
  • One tsp of ground cumin
  • One large peeled avocado- halved, pitted & coarsely chopped
  • Four tbsp of fresh cilantro- chopped
  • Two tsp minced jalapeño
  • One small, minced garlic clove

Preparation

Put the yogurt in the processor. Put the cumin in a small skillet (must be dry) over medium heat and stir for a minute. Next add the cumin to the processor, throw in the avocado,cilantro, garlic & jalapeño. Process till mixture is smooth. Add salt & pepper. Put this dip in a small bowl. Serve chilled

Chili Black Bean with Swiss Chard & Butternut Squash

Ingredients

  • Two tbsp of olive oil
  • Two & a half cups of chopped onions
  • Three garlic cloves-nicely chopped
  • Two & a half cups of butternut squash- peeled & chopped in pieces
  • Two tbsp chili powder
  • Two tsp ground cumin
  • Three 15-ounce cans of black beans, properly rinsed & drained
  • Two & a half cups of vegetable broth
  • One can of diced tomatoes
  • Three cups Swiss chard leaves- coarsely chopped

Preparation

First, heat oil on medium to high heat. Then add the garlic & onions; sauté for about 9 minutes until tender & golden. Add the squash & stir for two minutes. Put in the cumin & chili powder. Stir the beans, the broth & tomatoes. Bring everything to a boil. Cook on simmer, for 15 minutes. Next, stir in the chard and cook for another 4 minutes. Add salt & pepper.

Black Beans Hummus

Ingredients

  • Two cans of black beans (15-ounce), rinsed & drained
  • Three-fourth cup of tahini
  • One-fourth cup of fresh lime juice
  • One-fourth cup of fresh cilantro- chopped
  • Four green onions- finely sliced
  • Two tbsp of olive oil
  • Half tsp cayenne pepper
  • Two garlic cloves (large), minced
  • One tsp ground cumin
  • Pita bread, cut in triangles

Preparation

Put the 1st nine ingredients in a processor and process till it becomes smooth. Next, season the hummus with salt & pepper. Put the hummus in a bowl and serve with the pita triangles.

Shots of Bloody Mary Soup along with Pickled Vegetables & Shrimp

Ingredients

  • Thirty-two medium shrimp- peeled deveined & cooked
  • Two tbsp of fresh lime juice
  • Pickled vegetables (carrots, celery, olives & green beans)
  • One can of San Marzano tomatoes (28-ounce) in juice
  • Two green onions- finely chopped
  • Half cup chicken broth- low-salt
  • Two tbsp Worcestershire sauce
  • Two tbsp vodka
  • One tbsp prepared horseradish
  • Half tsp celery salt

Preparation

Firstly, toss the shrimp with one tbsp lime juice in a large bowl. Then thread one shrimp & one vegetable on a toothpick. Do the same for all. Lastly, cover & refrigerate till it’s ready to be served.

Panna Cotta Buttermilk

Ingredients

  • Two tbsp water
  • One & a half tsp unflavored gelatin
  • Vegetable oil (nonstick) spray
  • One cup of whipped cream
  • One tsp lemon peel- finely grated
  • Half cup sugar
  • Two cups buttermilk
  • Two tsp vanilla extract
  • Frozen berries – Assorted & thawed (blackberries, blueberries, raspberries)

Preparation

Take two tbsp water in a small bowl; put gelatin in it. Let it stand for 10 minutes till gelatin softens. Heat the lemon peel, cream, & sugar in a saucepan, stir constantly till sugar dissolves. Bring to a boil, stir occasionally. Add the gelatin mixture & let it cool. Keep stirring. Next, put in the vanilla & buttermilk. Refrigerate the panna cotta and let it set for 4 hours. Serve chilled.

Chocolate Cake along with a Raspberry Filling

Ingredients

  • One & one-fourth cup flour (all-purpose)
  • One-third cup of cocoa
  • Three- fourth cup of sugar
  • One tsp of baking powder
  • One tsp baking soda
  • salt to taste
  • Half cup of buttermilk
  • One jar of baby food (4-ounce) carrot puree
  • One jar of baby food (4-ounce) prune puree
  • One tbsp of vanilla extract (pure)
  • One tbsp almond extract (pure)
  • Two tbsp of brewed coffee
  • One whole egg
  • One egg white
  • One square unsweetened (1-ounce) baking chocolate, nicely melted
  • One-fourth cup chocolate chips (semi-sweet)
  • One-fourth cup of fudge sauce (nonfat)
  • Half cup of raspberry preserves (all-fruit)
  • One-fourth cup of fudge sauce (nonfat)

Preparation

Preheat the oven at 350°. Take some canola oil & lightly coat a cake pan. Now take some flour and dust the pan with it. Take a large-sized bowl and mix flour, baking powder, cocoa, sugar, salt & baking soda in it. In yet another bowl, mix buttermilk, prune puree, carrot, coffee, eggs and extracts. Beat this mixture lightly. Take an electric mixer and mix all dry ingredients. To this, add the unsweetened melted chocolate; beat (medium heat) until it turns glossy & smooth. Next, throw in the chocolate chips & fold in nicely. This mixture is now to be poured into the cake pan that you prepared. Bake approximately for 25 – 30 minutes. Lastly, spread some raspberry preserve on the bottom layer. Put fudge sauce (nonfat) on the top.

Coffee-Beans Granita

Ingredients

  • Four cups of water
  • One cup of sugar
  • Two & a half cups of whole coffee bean (around 6 ounces)
  • One-fourth cup of coffee liqueur (Kahlúa or Tia Maria)

Preparation

Take four cups of water & mix sugar in it. Bring this to a boil; keep stirring till the sugar dissolves. Now put in the coffee beans & boil for another two minutes. Cover the pan & allow it to cool after removing it from the heat.

Strain this liquid in a dish & throw away the coffee beans. The coffee liqueur is to be added now in the dish; you will have to stir so it can all blend nicely. Lastly, freeze this mixture. Before you serve, scrape some granite on top.

Fish Tagine along with Capers, Cinnamon & Tomatoes

Ingredients

  • Three-fourth tsp ground cumin
  • One-fourth cup of olive oil (extra-virgin)
  • One can of stewed & chopped tomatoes
  • One & a half tbsp drained capers
  • Half tsp cinnamon
  • Four pieces of hake/ halibut fillets

Preparation

Heat some oil & cumin over low-medium heat. Keep stirring till you can smell the fragrance. Throw in capers, cinnamon, tomatoes, and one-fourth tsp of pepper & salt. Simmer uncovered, keep stirring till the mixture thickens. Take the fish & pat dry; sprinkle one-fourth tsp of pepper & salt & add this to the skillet. Cook on simmer (covered) till the fish cooks, about 7 – 10 minutes.

Mixed Greens along with a Walnut & Roasted Onions Dressing

Ingredients

  • Two large-sized onions, peel & cut in 8 wedges
  • One cups of olive or walnut oil
  • One tbsp sugar
  • Half cup of chicken broth (canned)
  • Six tbsp of Sherry wine vinegar
  • Fourteen cups of mixed greens (curly endive, Belgian endive, radicchio and romaine)
  • One cup of toasted walnuts- chopped
  • Half red onion (small), halved & thinly sliced

Preparation

You need to preheat the oven at 400°F. Put two onions on the baking sheet (cut side facing down). Pour two tbsp of oil over this and sprinkle some sugar. Now bake the onions for 30 minutes; cook both sides till they look caramelized & brown. Once the onions are cooked & cool down, throw them in a processor. To this add one cup oil, vinegar, broth & puree. Add salt & pepper. Refrigerate. In a dish, add the greens, walnut (half cup) and the red onion. Add the dressing, toss everything well. Serve.

Quick Beef along with Broccoli

Ingredients

  • One & a half tbsp cornstarch
  • One-fourth tsp salt
  • One-fourth tsp black pepper
  • Three-fourth pounds of sirloin beef
  • Three tbsp vegetable oil
  • Ten ounces of broccoli florets, frozen & thawed
  • Three chopped garlic cloves
  • Three tbsp soy sauce
  • One-third cup water

Preparation

Take the cornstarch, beef, salt, pepper & toss together in a dish till it coats the meat. Take two tbsp of oil & heat in a pan, stir-fry the beef till it cooks through. Next, fry the garlic & broccoli till the broccoli becomes tender & the garlic becomes pale golden. Add to this some soy sauce with water & boil. Put in the meat and cook, keep stirring till the sauce becomes thick. Serve and enjoy your diet recipes!
